The frittata with caramelized onions and greens is the perfect balance of treating yourself and making healthier choices! Not only is it delicious, but it's easy to make! All you need to make this frittata are six eggs, one small yellow onion, ghee, kale, chard, or beet greens, lemon juice, sea salt, and chili!
First, you'll need to preheat your oven to 375°F. Then, in an 8-inch oven-proof frying pan, melt the ghee over medium heat. Next, you will add the onion and a pinch of sea salt. Let that cook for about an hour on medium-low heat, but don't forget to stir occasionally so the onions evenly caramelize.
Once the onions are fully caramelized, add the greens to the mix and sauté until they're soft. Once they're soft, add lemon juice and the beaten egg mixture to the pan and let it cook fo five minutes. Then, transfer it to the oven for another eight minutes.
Once the eight minutes are up, sprinkle a pinch of sea salt, aleppo chili, a drizzle of olive oil, and serve!
